Dove can be prepared much like cornish game hen or any other small fowl. Just in case I have a good recipie you may want to try.
4 Dove or similar small fowl
8 tbls margarine
3 green onions(incl stalks)
1 clove of garlic(more if you desire)
1 tbls course black pepper
1/4 tsp ground cumin
1/2 tsp salt
Remove feathers, head and clean doves just like you normally would.
set them in a pot of boiling water for no more than 3 minutes.
In a blender or food processor, combine margarine, green onion, garlic and cumin.
lay the doves on a baking dish that can be covered,( whole doves, breast side up)
place 1/4 of the butter mix inside the cavity of each dove.
cover the dish and bake in a preheated oven at 350deg for 35 min.
after 35 minutes turn doves over and sprinkle the salt and pepper over the doves and cook uncovered for 20 more minutes.
bast the doves 1/2 way through the second cooking cycle.
remove from oven and garnish with parsley or baby spring dill.
