I make a pike loaf wich the basic recipe consists of about 1lb of cooked pike flaked 2 cups of crushed saltine crackers or bread crumbs. 2 eggs well beaten. Half a stick of butter. Redmond real salt to taste. Pepper, parsley, and a dash of lemon juice. Cooked in a meatloaf pan in oven on 350. My mom loves it. I have also added ketchup and salsa to the top but momma didn't like it but I loved it. Its also great the next day on a sandwich with some mayo and horsey sauce.
