I eat many cottontails every year. I like to slow cook them in a stew with potatoes, carrots, celery etc. because they tend to be tough to chew. A few hours in the dutch oven or crock pot and they fall apart like tender chicken. I have also had jackrabbit jerky that was OK, but I just couldn't get over the fact I was eating one of those bug eyed little freaks.
