I got my first channel catfish yesterday, it was 26 inches, and was wondering how to clean it and some recipies? can you grill it the same as trout? I usually gut the trout leave the scales on cover in spices and butter inside and out wrap them in aluminum foil and through them on the grill.

[cool][#0000ff]You should fillet and skin your catfish...especially if it is a larger fish from Utah lake. That will help remove some of the oils and make for a better tasting and healthier meal.[/#0000ff]

Make sure to get some Weber cajun seasoning too. Smiths has it. A must have on catfish.

[Smile]congratulations on the big catfish my biggest is only about 16". It was'nt as big as your monster but bent the pole and got me excited.

dredge em in cornmeal, cornflour and flour, soak em in buttermilk for awhile to get rid of the gaminess - fry it and dip in some remoulade with some hush puppies or some shore lunch style potatoes, I have never seen anyone grill catfish (I am a texas transplant-now a native I guess), that is what salmon and trout are for.

I find the best way to clean them is to go down to the store and buy some, the farm raised stuff tastes better and skinning those things sucks.
