Ingredients :
2 tbl dark chili powder
2 tbl kosher salt
2 tbl powdered wasabi
2 tbl crushed coriander
20 oz yellowfin tuna loin, cut into four 5-ounce filets
4 oz peanut oil
Method :
Combine dry spices in a shallow dish. Lightly coat tuna filets with spice mixture.
Preheat a 12-inch heavy-duty non-stick saute pan and add oil.
Thoroughly sear tuna on all sides and serve immediately (tuna will be rare).
