Looks tasty. Judging from the size of those fillets, those must CJ perch? Cascade fillets would be bigger I think.

Add panko and coconut flakes and you're in for a treat. Lots of filet work. Very nice.

I eat perch for their flavor without adding much for seasoning, to me that is kind of like eating a good steak with catchup. I feel the same about walleye.[

Those are Montpelier perch, all small but tasty.
