When we caught those 250 perch this winter I was wondering what possessed my family and I to keep them all. And then we had dinner tonight and found my answer! Here's a picture.

Looks tasty. Judging from the size of those fillets, those must CJ perch? Cascade fillets would be bigger I think.

Add panko and coconut flakes and you're in for a treat. Lots of filet work. Very nice.

If they really made these, they'd be an awesome breading crust!

I eat perch for their flavor without adding much for seasoning, to me that is kind of like eating a good steak with catchup. I feel the same about walleye.[Smile]
